Substitutions
- Pork belly can be substituted for pork shoulder/pork butt if you prefer a leaner cut/no skin when eating. The fat from pork belly works well for the braise though.
- Dark soy sauce is to darken the color and can be omitted without affecting the taste much. Slightly more fish sauce can be added at the end to compensate to taste.

Rice
Start cooking jasmine rice in advance.
Hardboil Eggs
- Bring pot of water up to boil
- Cook eggs for 8 minutes (hardboil)
- Cool the eggs in cold water to stop the cooking and peel them.
- RESERVE SOME OF THE BOILING WATER, KEEP WARM ON STOVE
